
Friday was Daniel's 31st birthday! yeah! What a great night that we had with our friends for a little birthday dinner at Maggiano's and coffee afterwards at Dean & Deluca. Birthday dinners + friends = always a great time! Tonight we have a cookout with Daniel's family to celebrate with them.

I made these homemade ice cream sandwiches for tonight's family dinner. Yummy, huh??
We both have been pretty busy this week with work. Daniel's work is crazy busy and school for me is coming to a screeching halt. So much to do! I've hardly had time to blog it seems.
Malawi plans are still gearing up and I imagine our month of June we will be in 4th gear (sort of speak) with all the bazillion things to do before moving our of our condo June 30th and mission training in July. WOW...can you believe that we will be moving to Africa in 2.5 months?? Time is flying. Daniel set up a local (NC) phone number through Skype so we can have friends and family call us whenever. It is through Skype but the caller can call from any type of US number (Cell or land line). If we are online through our computers we can accept the call...if not it will go to our VM. The best part is that it doesn't charge the caller an international number. My brother Joel has it in Berlin...it is pretty convenient. We do love regular video skyping too...so skype us if you have a camera..."the mccollum family" is our user name.

Video Skyping... that's laughable!! I mean... things are changing rapidly in Malawi these days, but my internet would have rolled over and died if I tried to do video Skype. I'm just now having some flashbacks of how fun it was to spend hours uploading photos to Flickr and such. Good times...
But, who knows... maybe things have changed. I mean, I hear that there's a new movie theater in town now... so, just cross your fingers!
